MY BEST PICTURE
STORY
Taylor and I were looking for a good excuse to have a picnic. Luckily, about a year ago, the sun was out and the weather was tolerable. We had a nice bottle of rose wine and wanted to pair that with a light lunch. Truth be told, she picked up most of the ingredients, and I brought the buttery Ritz crackers.
INGREDIENTS
- 1 Bottle of wine (rose)
- 1 Package smoked salmon
- 2 Cucumbers (we cut them ahead of time)
- 2 Tubes of Ritz crackers
- Whipped chive and onion cream cheese
- Whipped plain cream cheese (we had this as a back-up)
- Fresh dill
HOW I MADE IT
This was such a simple snack. I am unsure which brand of smoked salmon we had, but it was a good brand because I remember it was in a big chunk and it flaked apart very nicely. Considering I am way too cheap to buy such a luxurious item, we can assume Taylor did not look at the price and just went for the purchase based on looks in the store. I poured myself a nice glass of wine and pretended that I was not very hungry.
I opened up the whipped chive and onion cream cheese, took out the bush of dill, and opened the packet of crackers. I started with a hearty smear of the chive and onion cream cheese on the cracker and topped it with a laughable amount of dill. Then I took a slice of cucumber that I pre-sliced and put into a plastic baggie. Then after I let Taylor open the most complicated packaged in our lunch bag, the salmon, I took a nice flake and put it on top of the cucumber. After realizing I only placed an embarrassing amount of dill under the cucumber, I placed a nice sized pinch on top of the salmon. All done, super simple and anyone can do that with no cooking involved.
MY HONEST OPINION
At first, I only layered the cracker the way I did to get a sweet picture of it. It was at the point I placed the entire cracker snack in my mouth that I realized it was gold. I had never paired cream cheese and dill before. I have seen it on plenty of commercials, but never actually pulled the trigger on it. The combination was so refreshing and surprisingly filling after you eat about 12 of them.
WHAT I WOULD TRY NEXT TIME
I feel as though the possibilities for combinations of this snack are endless. Next time I would incorporate some sweetness into the original treat, possibly by adding honey or a nice dollop of fig preserves. Honestly, this would be upgraded with a little sprinkle (or chunk) of sharp cheddar cheese. I am excited to try more of these combinations.
