S’mores Graham Cracker Cookie Bars

I think I can safely say that a majority of the human race enjoys a nice chocolate chip cookie. I think I can also say that s’mores are popular as well. If you do not like s’mores and/or chocolate chip cookies, well… I won’t talk about the issues surrounding that. I combined the two desserts!

INGREDIENTS

  • 8 Tablespoons salted butter (1 stick)
  • 1/2 Cup white sugar
  • 1/4 Cup brown sugar packed (light or dark)
  • 2 Teaspoon vanilla
  • 1 egg
  • 1 1/2 cup flour
  • 1/2 Teaspoon baking soda
  • 1/4 Teaspoon salt
  • 3/4 Cup semi sweet chocolate chips
  • 3/4 Cup milk chocolate chips
  • 1 1/2 cup mini marshmallows (1 cup for cookie batter, 1/2 cup for later)
  • 3 Hershey bars
  • 2 Graham cracker sleeves

HOW I BAKED THEM

I preheated the oven to 350 degrees F. Then I put my stick of butter in the microwave and watched it like a hawk, taking it out of the microwave when it it had just melted completely (about 45 seconds). Now it was time to cream the butter and sugars. In a large bowl, I beat the butter with the brown and white sugar together until creamy with a hand mixer. Drum roll please… it was time to add my favorite ingredient… VANILLA (and egg)! I beat in my vanilla and egg to the mixture, using the hand mixer, until just incorporated.

I mixed all the dry ingredients. This is personally my least favorite part, because I can’t help but get flour everywhere. How does anybody do this in a clean fashion?! Anyway, I mixed the flour, baking soda, salt together in a separate bowl, and then slowly mixed the dry ingredients into my liquid batter. Lastly, I added my milk chocolate, semi-sweet chocolate chips and the 1 cup of mini marshmallows. I folded these in using a rubber spatula. This completes the cookie batter.

I lined a 13×18 (standard baking cookie sheet) with parchment paper, and sprayed the parchment paper with a non-stick cooking spray. I broke all of the graham crackers into their squares, and lined them up on the baking sheet, leaving no gaps between each square. A few of them broke, but it wasn’t a big deal. I took any remainder graham crackers and crushed them up and set them aside. These were for the sprinkle at the end of the baking process.

I took my cookie batter, and put small scoops of cookie dough on each graham cracker square. I gently flattened the dough out on the graham crackers. I threw them in the oven to bake for 5 minutes.

While this is baking, I broke up the Hershey chocolate pieces. After the 5 minutes, I took out the baking sheet while the dough is under baked and piping hot, I pressed about 1 or 2 Hershey pieces and a few marshmallows in each square. I swear at this point, I did not sample any of the under baked dough. Then I sprinkled the crushed graham crackers on top of the squares.

I put the squares back in the oven for about 6 more minutes. I just made sure the cookies were not starting to brown too much because I hate over baked chocolate chip cookies!

I let the pan cool, and then I devoured these tasty bars 🙂

MY HONEST OPINION

These s’more bars were amazing! I actually made them so many times that I got sick of making them. I haven’t made them since December… so I think I’m ready to make them at some point soon. Brian would be very happy if I started making them again.

WHAT I WOULD TRY NEXT TIME

I absolutely love Hershey’s Symphony bars. If you don’t know what that is, you should go to a store ASAP and buy one. I always see them in CVS. I would try adding symphony bar pieces instead of milk chocolate Hershey pieces. Now THAT would be good.
